Black Forest Cherry
Lava Cake

Ingredients:

16 Cherries
1/2 cup Kirschwasser or Cherry Brandy
1/4 cup Sugar
1/2 cup Water
1 Vanilla Bean
or 1 teaspoon Vanilla Extract

2 Eggs
2 Tblsp Sugar
2 oz dark chocolate
1/4 cup (2 oz) butter
2 teasoons flour

Whipped Cream

 

Directions:

1. You can either use Morello Cherries

or use a Sour Cherry, or Fresh Cherries. Here I will use Fresh Cherries and show you how to pit them easily

2. This is a clever way to pit cherries. Put a small head nail on a board and push the cherry through it and it will push the pit out But keep the cherry intact.

3. SImmer the Water, Schnapps, Vanilla Bean or Vanilla Extract,and Sugar and bring to a simmer.
Pour it over the Cherries.

4. Cut the chocolate into chips and place in a bowl. Cut the butter into chips and microwave for 30 seconds at a time till it is melted. Whip together to smooth.

5. Crack your eggs in a larger bowl gather the sugar and flour and your hand held mixer.

6. Mix the eggs and sugar until it is doubled in volume.

7. Add the melted chocolate and butter mix very slow with mixer on low or fold in with a spatula. I add a bit of the vanilla cherry syrup to the mix as well.
