Roasted Chicken
If your going to make a comfortable dish like a roasted chicken, many times you get the giblets to. Why waste them?

Make aDirty rice stuffing
that uses the giblets and make your chicken talk Cajun!


This stuffing was suggested for a crown roast of pork but works well with a chicken also.

 

Turn a Soup or Stew into a Gumbo

So you think a soup or stew would be good tonight.
One of the my favorite and one of the most famous dishes is Gumbo.

I can remember the first time I heard about it even as a chef and a Cajun told me that that the base flavor of the gumbo was the roux, or the flour and oil that was cooked to thicken it. I went , HUH ? If you haven' t tried it before you need to, it is wonderful.

Here is a recipe for Seafood Okra Gumbo. You can leave the okra out if you want. That is not a problem. Richard Holbert that donated this recipe doesn't use seafood either. He substitues Chicken and sausage, and he writes, I tell you true, your mouth will bite your hand off to get it.

What if you made a
dark roux as a base for that chicken soup, or even pork or beef,
Maybe add some smoked sausage.
Maybe add some okra
Maybe add some file powder (add at the last)
Maybe add some shrimp and chicken together.

umm you have a soup similar to gumbo that really is wonderful.

Chicken breast Stir fry
It wasn’t until I read Paul Prudhomme that so eloquently wrote about Cajun cooking that I was inspired to use smoked sausage and chicken in the same dish.
What about adding to your chicken stir fry some smoked sausage and use some nice Cajun seasonings.

Pan Fried Steak
Season the Steak with some Cajun spice, and then bread it. Darken the roux for your pan gravy to give it some flavor.

A Vegetarian Meal
I loved the dish Red Beans and Rice so much it was my option to potatoes on any entrée served in my restaurant in the Northwest. Most all the Western Yank’s loved it and ordered it special.

Hamburger
What about making some of Paul Prudhommes Cajun seasoning and season your hamburger patties with it for a Cajun burger. Maybe make a Cajun Meatloaf.

Stuffed Peppers.
What about making a Jambalaya like dish and stuffing the peppers with that.

Grilled Salmon
Try heating up a skillet on your turkey fryer and doing a blackened salmon or any thick fish will work.
