I think that most folks are a little squeamish about using vanilla
in savory foods. Just the mention of “vanilla Vinaigrette” salad dressing” sounds like you are crossing 2 polar opposite foods, vanilla and vinegar.
If you are like me we are a bit set in our perceptions.
We hail Vanilla as the Queen of all dessert flavors and why can’t
it be satisfied with that. Now it wants to rule the savory foods as well???? I think it should keep in it’s place.
Vanilla is more than just sweet , as say a sugar is, it has a lot of floral
flavors also.
I have tasted vanilla in savory foods before like Stews and BBQ sauces
and haven’t really been impressed. It just didn't’t work.
While I do caution how you use vanilla in savory foods I do know
vanilla vinegar really does work! The sweet and tart combination feels like it’s very much at home on your palate!
