I have to say that if I had to choose one fruit that goes well with vanilla beans it would be pineapple.

 

Pineapple is wonderful by itself but it really takes on that Enchanting quality when you marry it with vanilla.

 

Try Grilling pineapple slices and topping with vanilla sugar, or a fresh vanilla syrup and garnish with part of the vanilla pod, and fresh mint.

 

I get asked this all the time about BBqing fruit. You simply put it on the grill

and bbq it. Heat it up basically. it brings the sugars out in the fruit, and caramelizes it a bit. Works the same with peaches and pears.

 

Take it a step further and put a tortilla on the BBQ, sprinkle some Jack or mozzarella cheese, and top with chunks of the BBQ pineapple and sprinkle some vanilla sugar on it. ummmm

The same works with pizza dough.

To make vanilla syrup

1 cup water
1 cup sugar
1 vanilla bean split down the center the long way

boil 10 for 10 minutes and remove from the heat.
Store in a glass or plastic jar.

For a nice twist add ¼ cup of sliced fresh ginger to it along with the vanilla bean while it is boiling.

To make Vanilla Sugar

 

1 vanilla bean cut in 1 inch chunks

1 cup sugar ( preferably organic or turbinado)

 

Blend in food processor for 1 minute. Strain out the large husk pieces.

 

 

 

Roasting a pineapple

 

This is a good thing you can do for a backyard BBQ that is decorative.

Roast a whole pineapple and baste with vanilla syrup.

It is good with the vanilla ginger syrup also. Just take a carrot peeler and drill some small holes in the pineapple and stick in the vanilla beans. Place in a foil pan on the BBq or oven and roast it. on the BBq it is good to use indirect heat.

Bobby Flay on the food network made a Grilled Pineapple Milkshake,

This is really good!

1 cup ice
several slices ( about 2 cups Grilled Pineapple )
1/2 cup pineapple juice.
1/3 pint lemon sorbet
1/3 pint frozen vanilla ice cream
1/4 cup Vanilla syrup
Club soda, to taste

Put ice in the blender. Add the cooled grilled pineapple, the pineapple juice, sorbet and ice cream. Pulse until the mixture is smooth and creamy. Pour into 4 large wine glasses. Top each glass with a splash of club soda. Serve.

This is also good in a low fat version using a lo fat ice cream and sorbets.
