Dinner Salad 1

Salad Greens
with Orange Segments, Red Onion, Dried Cranberries
and Vanilla Citrus Vinaigrette
serves 4

4 handfuls tender salad greens,
2 oranges cut in segments or 1 heaping cup mandarin orange wedges
4 slices of red onion
1 / 2 cup dried cranberries

Dressing:

1/ 3 cup fresh orange juice
(juice from one orange)
1 / 4 cup olive oil
1/ 4 cup vanilla vinegar
sea salt and pepper

Vanilla Vinegar is vanilla beans infused in white balsamic vinegar.

You can also use a combination of 1/ 4 cup vinegar of your choice and 1 tablespoon vanilla extract.

1. Squeeze the juice out into a stainless bowl,
Straining out seeds.

2. Add the vanilla vinegar, and olive oil

3. Add some sea salt and pepper mix well with a whisk

Add more salt and pepper to taste if necessary.

Note: To make the vanilla vinegar I use 3 -6 vanilla beans in a glass jar with
white balsamic vinegar. Other vinegars work equally as well.

Toss the greens in a large salad bowl with some of the dressing.

Start with a little and then add a bit more if necessary.

Top with the orange segments, red onion and dried cranberries;

The addition of toasted almonds or sunflower seeds for crunch is a
great addition.
