Some Background on Schwenkbraten and Spiessbraten

I became interested in Schwenkbraten and Spiessbraten years ago when several of the readers asked for a recipe.

I was curious and so I asked and read and searched and tried my hand at making it. I was of course fascinated with
the Schwenker grill and the unique marinade that they use in this regional favorite.

Schwenkbraten are pork steaks that are marinated and then grilled on a swinging arm grill called a Schwenker shown below, that uses beech wood coals.

The Speissbraten is a roast usually pork neck or a beef rib either marinated or rolled. Spiess means "spit" so it is roasted over beech wood. on a turning spit or rotisserie.

This classic Idar Obersteiner recipe usually uses pork sirloin. I used
pork loin because folks that I was cooking for were watching calories.

My adapted version using pork tenderloin again. One roast was was
marinated as is, and the other I cut it flattened it out and rolled it with
the onion marinade. it is an extraordinary presentation.

I didn't have a rotisserie or Spit so I just decided to stand there
and turn it myself with tongs over a Barbeque Well sat down sometimes to chat
and I nursed a beer through the process. I can't wait to try it again.

This is a nice companion book to Recipes from a German Grandma.
From Germany with Love tells the story of my grandma, Emma Block, growing up in a little town in Baden/ Würtemberg, Germany near Heidelberg named Steinsfurt. Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.
