Quick Sauerbraten

German Pot Roast that is cut into pieces
to hasten the cooking.

Barbara Wilke sent me this recipe
from an old recipe handed down from family member to family member.

I only know the Sauerbraten as far back as my grandmother, Josephine Hellrung Schneider. She likely got it from her mother, but that I do not know. However, I do know that this recipe was passed along to her daughter, my mother, Eugenia (Jean) Schneider Oppermann, then to her son and daughter: Bob Oppermann and Barb Oppermann Wilkie. Now I've passed it on to Bob's daughter, my niece, Julie Oppermann Knie and my son and daughters, Tom Wilkie, Liz Wilkie Bedeur and Jocelyn Wilkie Sanford . and now, May 24, 2009, to this German cooking community.

You will see on this old family recipe that Barbara has added extra amounts of certain ingredients
to their families likeing. I do that myself. It could be our tastes have changed slightly since the Old Country times, and it could be that recipes always underdid things, to please those that don't like strong flavors like onions and vinegar. ....Stephen Block

Rhubarb Compote

This is a very versatile sauce. You can use it as a dessert topping, a side dish with roasted meats,,
and even mix with some savory items and salsa to make a custom fruit salsa for grilled Tuna, Chicken Breast, or Pork Chops to suggest a few.

This recipe is simple as pie ...well even simpler than pie because no crust!
If your going to the grocery or you have it in your garden get some and let's experiment and see if we can enchant your menu a bit with rhubarb.

German Fruit Pudding

From last weeks recipe request........

My grandmother was a caterer for many years here in Buffalo , New York . She used to make what she called a strawberry-ruhbarb "gritzka" (spelling?). It was a thick pudding that she would serve us warm with heavy cream. It was wunderbar...... If you can locate a recipe it would be great!!!!!

Any red fruit will work, strawberries, Raspberries, Rhubarb
One person called this dessert, Rubies in Springtime, because of it's beautiful red color

Lentil Rhubarb Soup

Rhubarb adds a nice dimension of flavor to this soup

The rhubarb almost completely blends into the soup. You would
never know it was there, although my guests thought it was little
bits of ham.

Overnight Kuchen

This is a very popular dish up in the Dakota's where I live.
Lori Crandall was asking for a plain Streusel kuchen that her
Oma used to make and then put pudding on to keep it from drying out.
here is a recipe that I really liked.

This recipe you make the dough up a day ahead, then top with a nice custard and cinnamon crumbs toppings.

Balloon Wine

Here is a very interesting recipe from one of our readers
who is a prolific cook. Basically you just add a few ingredients to any non citrus fruit juice and a few ingredients and put the ballon on top.
The ballon will blow up like this during fermentation.
When the ballon goes down the fermentation is done.

She is making cranberry wine at this time.

Kitchen Tool Review

Choosing a Good Blender
What goes into a good blender. Cook's Illustrated did a review recently and found several things are important. One is blades that are positioned at different angles not just 2 blades up and 2 blades down but more irregular like Joshua singing and dancing. Also it helps if several of these blades are serrated. Good blades are determined in part by how well they can crush ice.
Also a blender should have a V shaped container which keeps the product close to the blades.

Recipe Request......

I have a request for something I do not know the name of. When finished it is firm candy.

In the recipe there are roasted / chopped almonds.

Fresh cream
powdered sugar
marzipan
Maybe other ingredients, I don't remember

all melted and cooked in container on stove.It till be thick and can be poured out on brown cooking paper.Then it can be shaped in the form of a loaf with hands.
Then it can be cut in squares and dipped in a mixture of melted chocolate and wax.
Yummy it is so good, but I don't know what it is called or the exact ingredients or measurement.

Maybe with your vast knowledge you can help me out with my request.

Crock Question

I had a question for you. Have you ever used a Harsch Gairtopf Fermenting Crock Pot? I have seen them on the internet but have never known anyone who had one. They are imported from Germany and are supposed to be great. They are a bit of an investment though as prices start at over a hundred dollars. (I have made sauerkraut the traditional way but am never able to keep it for any amount of time without freezing or canning it which is supposed to kill the nutritional value.) Any feedback you might know concerning the crock would be appreciated.
