Back in Palm Springs, and I want to thank all of you that gave prayers and thoughts for my 84 year old Mom and co-author of our German recipe book, as she went through a difficult surgery. She has turned the corner and is in rehab!
I have learned so much about Maultaschens from the last newsletter that I had to share my excitement in this newsletter. I love a food you can use in so many ways from salad to casserole. Thanks you Chrita and Heidi!
While the Fall seems racing toward us I wanted to share the Brewmeister's chicken recipe from Christa Back, because I was suprised that so many folks have never BBQued a chicken "Beer Can Style".
Beth Mitchel was looking for a creamy purple cabbage recipe that he mom made instead of the sweet and sour, so I tried to reproduce one that I had at Haus Murphy in Glendale, Arizona. I share the results here with pictures.

Christa Oviedo Wrote some nice tips for Maultaschen
I am from a small town named Köngen am Neckar it is south of Stuttgart. Where the doctor still comes and makes house visits.
Maultaschen hat man so viele möglichkeiten zu machen. Ich mache wenn ich Maultaschen mache mindestens 100.
This means there is so many possibilities with them that she makes them 100 at a time and freezes them, and they never hang around long. I can attest to that as well.
Christa says she now uses the fresh pasta sheets that you can buy in the deli section.

Christa will bread the Maultasche in panko mixed with parmesan cheese.
Here is one for this summer
Maultasche Salad
Fry the Maultashe and cut in slices, and lay on a bed of greens
that has been tossed with a good vinaigrette flavored with good German mustard.
You can also bake the Maultaschen with sauce and topping.
Christa suggested also that you can lay ham and cheese across the top and bake.
Heidi Boepple Nikolaidis likes to eat Maultaschen with eggs
Put some butter and chopped onion into the frying pan. Saute for a few minutes, then add the sliced Maultaschen, stir till hot. Then add beaten egg and keep stirring for a few more minutes till egg is cooked. We always sprinkle ours with a little Maggi for added flavor.
This is a German version of a "Beer Can Chicken" That uses a
German mustard rub on it. I can't believe that not everyone has heard
of Beer Can Chicken by now, but I do it at the hotel often and others
are surprised to see a chicken being cooked on a can of beer!

My friend Peter Menyart who lived for a long time in Bavaria,
that they use Ring Bologna for this dish.

Karen Kinanne Made one batch of elderberry-apple jelly last month
and sent me some nice pictures.
She cooked the elderberries in fresh apple cider,
due to the bush only producing one bowl full of berries.
It is not quite as good as all elderberry which has a heavenly flavor, but it is good (sweet but that was the recipe)
My Grandmother use to make wine jelly from the wine that grandpa made that wasn't very good. My dad remembers it very fondly as one of his favorite of all jellies.
Karen has written extensively about how her Aunt made Elderberry Jelly in Germany that I found enthralling. I haven't made a lot of jelly but I was so interested in this. They also make a Elderberry soup, much like the Cherry Soup of Sylvia Norris collection in the last newsletter.
I first tasted this in Glendale, Arizona at the Haus Murphy. It stood out as one of the best sides I have had with a schnitzel. It is something a bit different than what you usually get. They used a Savoy style cabbage, but this all I had to work with, but it was as good!

Now what is German about him?
Elvis grew up with sausage, but he developed a taste for bratwurst when was in Germany with the U.S. Army in 1958-59. - From "Are You Hungry Tonight?" by Brenda Arlene Butler
QUICK-AND-EASY BRATWURST SANDWICH
* 4 fully cooked bratwurst
* 1 teaspoon corn oil
* 1/2 cup red bell pepper, chopped finely
* 1 8-ounce can sauerkraut, drained
* 1/2 cup Rhine wine or sweet white wine
* 1/2 teaspoon caraway seeds
* 4 French rolls, split
Heat large non-stick frying pan over medium heat. Add bratwurst and brown, turning occasionally. Push bratwurst to one side of pan; add oil and red pepper. Cook, stirring 1 minute.
Stir in sauerkraut and continue cooking 1 minute. Add wine and caraway seeds. Cover pan tightly, reduce heat and cook over low heat for 9 minutes.
Toast French rolls, if desired. Place bratwurst in each roll and top with equal portion of sauerkraut mixture.
Once, when Presley was hospitalized and on a restricted diet, Ms. Langston smuggled in bags of hot dogs and sauerkraut.

Kitchen Tool Review
The Wooden Spoon
One of my favorite and most used kitchen tools.
I love the feel and sturdiness of a wooden spoon. I can use it in any
non-stick pan, The flat bottom is nice so you can scrape the bottom
to loosen food as it is cooking.
I don't mind paying for a good wooden spoon. I paid 12 dollars for mine
It seems like a lot for a spoon but I use it every day and I love it!
