Moving on with our series on Christmas baking.
Here is a cookie that is very popular called Pfeffernüsse.

Pfeffer means pepper and I DO actually put ground pepper in these but that is not necessarily why they are called Pfeffernüsse. Pfeffer can also mean spicy. Some times lebkuchen is called PfefferKuchen.

These cookies have a lot of good spice in them like cinnamon, cloves, cardamom, ginger, nutmeg, mace, as well as citrus peel.

There is a long history of the spicy cookies in Germany going back to medeival times. The monks were the first to make them, and the old recipes from the 14th century show that they used 7 spices in memory of the 7 days that god created the world. Symbols were very important back in this pre-age-of -science and information era, so cookies were a good medium to teach. Imprints of the saints were baked into Lebkuchen to help children learn their faith. More about the history of German cookies later.

The nüsse part of the name means nuts. they do not always have nuts in them but they are often shaped like a little nut. There are so many recipes for this cookie, some have many different spices, some have eggs some don't. Some have butter or shortening and others have none. (without shortening they get hard and become dunkers) Some are rolled into little balls and some big. Some are flat on the bottom and round on top, and some are frozen in balls and then baked to stay completley round. Some roll them out in sheets and stamped out circles and some make rope and cut off chunks. And finally some are cased in creamy icing and some are frosted or just rolled in powdered sugar.

I have adapted this from my grandma's recipe.

The cookies get better with age as they mellow in a cookie tin.

Candied Orange Peel

One of the ingredients in the Pfeffernüsse and other German baked goods is candied orange peel.
I like to make my own. Hey, I think it is better plus
you just are going to throw that peel away.

Mine is always diced and used for baking in cookies and Stollen.

You can also cut it in strips and make a nice candy out of it.
My mother loves this.

Just melt some chocolate chips and dip part of it in for chocolate
covered orange peel.

Linzer Torte

My Linzer Torte

Linzer Torte is a traditional Christmas torte in not only
Germany but Austria, Switzerland and Hungry.

Caroline says of all the baked goodies at Christmas
Her German family liked this the best.

Here is her recipe

My Linzer Torte


1¾ cups sifted all-purpose flour
1 teaspoon ground cinnamon
¼ teaspoon ground cloves
¾ cups sugar
1 can ( 4½ ounces whole almonds, ground (1 cup)
¾ cup ( 1 ½ sticks butter)
1½ teaspoons grated lemon rind
2 egg yolks
1 teaspoon vanilla

1 jar (10 ounces) red raspberry preserves
Whole blanched almonds (optional)
10X confectioner’s sugar

Sift flour, cinnamon and cloves into a large bowl; add sugar and almonds. Cut in butter with a pastry blender until crumbly. Blend in lemon rind, egg yolks and vanilla; knead a few times until smooth. Chill dough about 1 hour.

Press 1/3 of dough evenly on bottom and one inch up side of 9-inch round cake pan with loose bottom. Spread ¾ of Jam over dough. Roll remaining pastry between 2 sheets of wax paper to 9x6 inch rectangle; cut lengthwise into 6 strips.

Arrange strips over jam to form a lattice top. (If you are intimidated by lattice work, cut small pieces of dough with leaf or star cookie cutter and arrange in a pattern across the top of the jam. Then put ALL the preserves on in the second step in the spaces between the design) Press edge down all around to form a rim. Arrange whole almonds on rim, if you wish.

Bake in a moderate overn (350 degrees) for 50 minutes, or until lightly browned. Cool 10 minutes on wire rack. Remove outer rim of pan; cool completely. Fill lattices with remaining jam; sprinkle with powdered sugar


P.S. You can also use walnuts or hazelnuts instead of the almonds if you like them better.
