What is Quark ?

der Quark ...pronounced.. .dare quAIR k ..as opposed to cork with a Q

like the "quark we say in the U.S. that refers to a subatomic particle.

Quark a close equivalent to the English word for curd.
I had so many readers write in and tell me that a German Käsekuchen is
made with Quark and not cottage cheese.

A reader Monika sent me her recipe for Quark and wrote this about it...

Both quark, a type of soft, fresh cheese, and rye bread are staples in German homes that are sorely missed when living abroad. In the United States , these favorite foods are either hard to find or just don't taste like "home." Using ingredients common in America. Quark is used for baked potatoes, to spread on bread or a bagel, to make cheesecakes, and it makes a wonderful dip by adding, chopped onion, and bleu cheese, it is also good as a dollop on fruit or in place of anything you would use sour cream on.

Soft cheeses very similar in the sense that they are thickened with an acid as opposed to to harder cheeses that are thickened with rennet, an animal protein. It is very similar to yogurt and sour cream, but quark is drained of much of the whey.

This is quark sold by the German Deli.com
You won't find this in the ordinary U.S. Grocery store.

A reader Ursula told me that there is a place that is
within about 50 miles of me that I can get quark.
I had no idea and I found other German deli's and stores
near me when I googled it. You may want to do the same.

You can also make your own Quark like you can
the Old Fashioned Cottage Cheese

Thanks, as a matter of fact I have spent 20 years looking for three recipes/items. I lived in Germany for 8 years and love the food. In particular Schwienehaxen with the crisp outer skin, Schaslik as is sold on the streeets of Frankfurt and Stuttgart and last but not least is Rotwurst or Rotewurst as sold all over the southern half of Germany with Brotchen. Any help would be appreciated. Thanks Jim W.
