Guten Tag,

I am your host
Stephen Block

I really enjoy hearing about German dishes that get an American twist on them. Like Beef on Weck in the Buffalo, NY area, and Boova Shenkel an old Pennsylvania Dutch recipe. I know that in Germany they do the same with dishes of other ethnics like Currywurst and Schnitzel Hawaii.....

I usually find out these things by happenstance and that they are such a part of certain pockets of German-Americana. Like Fleischkuekle in the Dakotas, and German Bierocks in Kansas and Nebraska. Arthur Myers told me about how they do Sauerbraten in Baltimore which they call Sour Beef and I was fascinated. They shred the meat with 2 forks instead of slicing it. and serve it with potato dumplings. So I tried it, my version that is, because I have never had the original, so I don't know how authentic it is but it sure was good!

Shredded sauerbraten over potato dumplings.
with thanks to Arthur Myers.

Not being from Baltimore, but inspired by one of our readers; Arthur Myers, told me about this regional style of Sauerbraten and it reminded me of my love for Shredded beef, so I had to try it. This is my version and I love the versatility of the "Pulled Sauerbraten" that you can use the left overs in a sandwich or even rolled in a tortilla.

This is a perfect crock pot dish as well.

Potato Dumplings

These are made from cooked potatoes like my grandma used to make. You can also use half cooked and half raw potatoes.

Apfelkuchen
(apple cake)
with Custard and Streusel Topping

In the winter apples are usually plentiful to make a nice dessert.
Just like apple pie is wholesome America, then Apfelkuchen from the Vaterland is good Wholesome German-Americana.
Kuchen is the state dessert of South Dakota I hear.

Bierocks

This is a favorite from The Kansas Nebraska area. It is also called a Runza there. It'd roots go back to the 18th century in Russia and recipes have survived with families that settled in the Kansas, and Nebraska area.

Roggenbrot

This is a wonderful recipe that is from my good Chef friend in Penn-Dutch land, in Pennsylvania.
He has developed a baking course for professional bakers, with lots of step by step pictures.
Mark's Passion is to help folks understand that baking is simpler than it seems and you can work off of a few basic formulas that can be turned into many different products.

He has a course and a book for home baking coming out soon.
He is known as the Baking Advocate.

Go here for the recipe for Roggenbrot

I order from the German Deli more frequently than ever.
I try to get in bulk to make the shipping dollars count.
Also there are sales all the time I like to take advantage of.
They are nice folks. If you don't believe me call them.

Kitchen Tool Review

The Wooden Spoon

I have all of these knives,
I particularly use the middle one which has the "snub nose" shape.
It is great for dragging through a strawberry to slice it as opposed to cutting it from the top down.
Having the snub nose seems to give it more bulk to cut.

The top one is great for paring an apple or potato or segmenting an orange. The bottom one is great for getting into tight spots like through a chicken joint and hulling a tomatoes or strawberries.

Our favorite restaurant, Berliner Bear, closed down and we are heartbroken.  My husband especially loved their rolled pork loin.  If you could come up with that receipt he would be delighted.  We both look forward to your newsletter and trying new dishes.

Hi Stephen,
How nice to hear from you.  I do have a question and did not even think to ask you so here goes.  I bought a Knorr Fix for 3  Roulden .  On back of package it is  for 40g.  Would you have any idea what the instructions are for this mixture?  It is all in German.  I did write to Knorr but have not gotten a response. Any suggestions would be appreciated.

Thank you,
  Linda
