Barbara's Goetta

This is a special family recipe donated
by Barbara Jackson (Geyer). Her grandmother use to make
this every Christmas, and has fond memories of it.
She has carried the tradition on with her children and grandchildren.
Her family originally came here from Germany and settled in
the Newport, Kentucky and Cincinnati area where this dish originated.

What is Goetta?

Goetta, a German dish, is often compared to
breakfast sausage or scrapple.  It is pork or a blend of
beef and pork , Whole grains, mostly Steel cut (pinhead oats) and sometimes barley.
and seasonings. It originated around the Cincinnati , Ohio area but was originally
a Northern German dish designed to stretch meat.

Quarkkartoffeln

Marlene Briete wrote and told me of this dish she makes with Quark. She says this is a simple recipe, usually as a time saver,and a Friday meal for Catholics (back then) but very delicious and HEALTHY.

Here is a quick way to make a Quark like cheese that I JUST LOVE.
Cynthia Grossman shared this with me a few weeks ago and I have made 2 batches already. You just strain the yogurt in a coffee filter overnight.

Rheinsalm

Pan Braised Salmon, with a light cream glaze. This is a simple and easy recipe. it uses a chef technique of blending cream and egg in the sauce to give it a nice finish.

*Salmon was at one time so plentiful in the Rhine river that it “glittered with silver” as some put it. However through over-fishing, dredging and pollution the fish were practically extinct. Through a large cleanup effort and restocking with Atlantic salmon the waters are now alive with fish again.

German Egg Bread
(German Baked French toast)

Cut stale bread into slices about ¾ inch thick. Cut slices in half, and soak for a few minutes, turning frequently, in the following mixtures: 1 pint of sweet milk, 3 eggs, 1 teaspoonful flour mixed smooth with a little of the cold milk and a pinch of salt.

Fry half dozen slices of thinly-sliced bacon in a pan. Put bacon, when fried, in oven to keep hot.

Dip the slices of soaked bread in fine, dried bread crumbs and fry quickly in the bacon fat (to which has been added one tablespoon of butter) to a golden brown.

Serve at once on the same platter with the bacon, or instead of using bacon fat, fry the crumbed bread in sweet drippings, or a tablespoonful each of lard and butter.

This is an appetizing and wholesome breakfast or luncheon dish, served with a tart jelly, either currant or grape.

German Black Bread

Here is a nice recipe from Barbara Rokitka that uses Rye Meal. this is a coarse rye that artisan bread makers like to use. You can often find it in the bulk section of the grocery or Bob's Red Mill products. You can also cook this up for a breakfast cereal.

Brinkers Rye Bread

this came to me in a nice wrapped tightly in plastic wrap and then in a sealed bag.
The bread tasted fresh and with a flavor that I don't find in Rye bread made here in the states I served it for a dinner and everyone loved it. I highly recommend this bread from the Brinker Bakery in Wanne Eikel, Germany.

My husband and I were stationed in Wiesbaden, Germany for 3 years and we absolutely loved the culture, food, and history! We frequented Mainz a lot and have been trying to find a recipe for their famous spundekase and the only recipes I can find are in German.
