Just a quick hello and a simple newsletter wanting to send along a few of the recipes I got from folks from Germany and the U.S. about the
wonderful variety and flexibility of the Kartoffelpuffer!
Some were so intriguing that I had to try them.
Dieter said to serve a potato pancake on top of Pumpernickel and I thought Hmm starch on starch. but he said you MUST try it , the flavor is fantastic. Also on the pumpernickel goes Ruebensirup, and I didn’t know what that was.
A week earlier I saw some German Beet Sugar Crystals in a Tea shop so I decided to get some. Providence was with me as Ruebensirup is made from Beet Sugar. Ruebe is Beet in German. it is actually a umlaut u but they don’t always come through in email so I spell it Ruebe.
I figured it was meant for me to try this combination. I made the Ruebensirup or Zuckerruebensirup as it is also called and loved the whole combination.
Karin Kinnane wrote me about great memories of buying Kartoffelpuffer on the streets of Germany, and the wonderful creamy very fine textured apfelmus ( applesauce) to go with it.
She wrote how to make it and it is so wonderful and creamy I wanted to share that as well. |

Potato Pancakes
on
Pumpernickel with Rübensirup
My friend Dieter from Gelsenkirschen, wrote me about a favorite way to
do Kartoffelpuffer in his area of Germany.
At first I didn't really understand putting a potato pancake on top of a slice of
Pumpernickel bread topped with German sugar beet syrup,
but when I tried it , I thought it was a lovely combination!
Come into my kitchen and let's make
some Rübensirup ( German Beet Sugar Syrup)
and assemble this

Smoked Salmon

Here is another version that Dieter said is popular where he is from in Germany.
Smoked salmon or lox is served with the pancakes and sour cream and chives, make a great topping to go with it.
Harold Severin, said that he enjoys sour cream mixed with a bit of horseradish on
potato pancakes.
Anette Holmes says her uncle use to eat strawberry jam and Andreas Probst
said yes and top with puderzucker! ( powdered sugar)

Karen Kinnane told me about how in Gemany the potato pancakes are street fare that
you can buy and walk around eating, and there is a pump activated "apfelmusser" that
dispenses this extra creamy applesauce (Apfelmus) that goes well with these fried potato pancakes.

Let's make some Apfelmus
this makes a great gift, and project when you get a bushel full of apples.
The Wurst Fest in New Braunfels, Texas reports that the Kartoffelpuffer
booth are among the top selling booths at the fest.

The Kartoffelpuffer are often shallow fried to get them very very crispy.

These Potato pancakes I blended cooked Kale in with it.
Any greens will work, and this adds some nutrition to it.
