Cucumber Recipes

Thai Cucumber Salad

This is a lovely salad that can be used as a side dish or even a relish.
Just as we use pickles relish for a tangy pick-me-up for a meat or potato, so we can use a cucumber salad.

ingredients:

2 medium cucumbers

Dressing:
2 tablespoons vegetable oil (not olive oil)
1 small onion, chopped finely
1/2 cup unsalted peanuts
1/4 cup lime juice or lemon juice
2 tblespoons sugar
1/2 teaspoon chili flakes or sauce ( like Sambal Olek )

Directions :

Slice the cucumbers thin in either rounds or long Strips
toss the cucumbers in 1 teaspoon salt.
Leave to drain in a sieve for half an hour.
Squeeze drained cucumber to remove excess moisture and dry between paper towels.


Saute onions and peantus in oil for 2-3 minutes.
remove from heat and cool for a minute.
Add remaining ingredients and stir to dissolve.

Toss dressing with cucumber slices, chill and serve.

Note*You can substitute sesame seeds for the peanuts.
