Dilled Black Kale

This is a great dish to use as a bed for roasted lamb or pork chops

Ingredients:

1 bunch of fresh Black Kale or Chard
Olive oil for saute
1 / 2 medium onion 1/ 4 inch dice
a few sprigs of fresh dill or
1 teaspoon dried dill weed
1 / 4 teaspoon cinnamon
1 / 4 teaspoon red pepper flakes
1 cup chicken stock
Salt and pepper

1. Cut the chard down the long way, and then chop into approx. 1 inch chunks.

Cut all the way down including the stems.

2. Saute the onions in olive oil, add the dill, cinnamon and
red pepper flakes.

3. Add the stems and cook for about 2 minutes stirring often.

4. Add the leaves and continue to cook and stir for a few minutes.

Add the chicken stock and cook for 10 minutes or until tender.

Season with salt and pepper and finish with a nice vinegar if desired.

It works well as a bed for chops, chicken or roasted meats.
