8 large potatoes, peeled and cubed (Russet potatoes or Yukon Gold )
1/2 head of cabbage
1/2 cup chopped green scallions, or one bunch
5 cloves roasted garlic
1 small chopped onion
milk
butter
dill (1/2 t. dried, or 1 t. fresh chopped)
fresh ground black pepper




 

 

1. Put 5 garlic cloves in a microwave proof dish with 1/2 cup water and cover.
microwave on high for 5 minutes. microwave for 5 more minutes while you prepare the rest of the dish.

2. Chop the cabbage into thin shreds. Sauté onion with a little butter till onions are clear then add the cabbage and saute until limp. Then reduce heat and cover; let it steam for 5 minutes or so. Add the scallions and sauté for a few minutes more.

3. when the garlic is tender mash it till it is a puree. This is such a wonderful seasoning to add to any mashed potatoes.

4. Meanwhile, boil, drain, mash the potatoes, add some milk and a little butter. Add the cabbage mixture, a little of the roasted mashed garlic to taste and stir in the dill and pepper.
