Working with Sweet Potatoes

Whether it be sweet potatoes , yams or even Squash or pumpkin,
you can make a casserole by adding just a few ingredients to give
a nice flavor accent, and a crunchy crumb topping.

What is the difference between Sweet Potatoes and Yams.
What is normally refereed to a yam in the states is really a darker variety of
of the sweet potato. The origins of these are both from South America.

Different varieties of Sweet Potato.
The lighter yellow is less sweet and a dryer texture.
The darker orange is sweeter and more moist.

A true yam is a different plant with origins in Africa. It can grow to be
4 feet long!

The name Yam comes from the phrase , to sample or eat.
Probably because it was a huge source of food in ancient Africa.

Here is a good basic recipe for the Sweet Potato Casserole.

Flavorings to use with the Sweet Potato

This is a basic recipe that you can add your own flavor too.
Like a few dashes of Bourbon, or other whiskey, Vanilla extract,
Maple syrup or flavoring

Also nuts, like pecans, or walnuts are great, either inside or topped.

chunked or crushed pineapple is a great addition.
Marshmellows? ...well if your not sick of them.

 

Spices
Sweet spices are great but use sparingly.

Pinches are good

nutmeg, allspice, cardamom, cloves

CInnamon you can go a bit stronger on.
orange or lemon zest works great.

You can also add flavor by simmering sweet potatoes or yams in
Orange Soda , or lemon lime soda instead of water.

Poached Eggs on Toast with Parmesan and Pesto

This recipe includes a recipe for Pesto to be drizzled over the finished eggs. If you do not want to make the pesto, there are several pre-made brands available, and if it is something that you do not use a lot of, it also freezes very well. As always, feel free to play with the ingredients, you may prefer fried or scrambled eggs instead. Recipes are just a guideline to get the ideas flowing. This recipe makes 2 servings at 2 eggs per person.
