Reconstructed Pork Chops?

I have seen these pork loin roasts in the meat section more and more.
This is what they make pork chops out of.
They are a nice big Pork Roast with the bones in that make yummy thick pork chops.
You can either roast it all on it's own like a baby Prime Rib Roast, or you can smoke it and make like a Ham and make what is called Smoked Pork Chops, or in Germany they call them Kassler Ripchen.
First I smoked it in my Flower Pot Smoker

I brined this pork loin roast before I smoked it.
I followed a German recipe for it called Kassler Ripchen.

I made from the smoked Pork Loin a braised dish with sauerkraut.

My friend Mike Arnoldi slow smoked with hickory made a similar dish and simmered it in a simple tomato, or Marinara sauce with sauted onions. The smokiness of the meat will make the sauce a nice smoky flavor.

This is a Pork Chop stuffed with one of my favorite dressing combinations,
apples and onions and herbs.
I flavored the dressing with ham and Pumpernickel bread.

An Interesting New Cooking Tool
The Pressure Cooker isn't new, Presto started manufacturing large pressure cookers for industrial use
in 1905. In 1939 Presto created a sauce pot style for the house hold was created.
The New Digital Pressure Cooker is getting rave reviews.
I have a feeling most of us will have these in a few years.
It is real cooking sped up to using pressure unlike a microwave. A 3 pound corned beef brisket takes 1 hour instead of 3 and potatoes for mashing take 8 minutes or so instead of 20 or 30. Rice takes about 5 minutes and Brown rice 10 or 15. Interestingly you put t he rice in an oven safe glass dish or stainless bowl and cover it, then place on the rack in the pressure cooker.
The ones most of us are use to give a lot of us the willys thinking
that the hissing sound is something about ready to explode.
