No Knead Bread
I have been hearing about this more and more.
Rick Wiedman my friend sent me this recipe that he tried and was skeptical about.
He was suprised by Joy ...chewy crust , but great texture bread , and no Kneading!
This is sort of a revolution in bread making although not really new. It is just that making bread without the kneading process has not been in the mainstream.
With our modern nano-second age this recipe is emerging as something easy and do -able on a regular basis for those that don't want to take all day making bread....

Gingerbread and Lebkuchen
A German perspective
This is the time of year for Ginger bread
and in Germany called Lebkuchen where they perfected the art in Nuremberg , due to the adjacent honey farms and being on the spice route.

These can be used for a dinner roll or also iced and used as a breakfast pastry.
Ingredients:
1 pkg. yeast
1 Tbsp. sugar
1/2 cup warm water
3 eggs
1 tsp. salt
1/2 cup melted butter
1/2 cup warm water
1/2 cup sugar
5 cups flour
Icing * (optional)
1 cup powdered sugar
1 teaspoon vanilla extract
Mix well , add some water a few drops at a time if needed till you get a smooth paste
Directions:
Pre heat oven to 400 degrees
Combine first 3 ingredients; let soak. Mix eggs, salt, butter, water, and sugar together well.
Add yeast mixture, then flour, one cup at a time.
Cover tightly. Place in refrigerator overnight.
Divide dough in half. Roll into 12 inch circles and cut into 16 wedges.
Roll wedges into horns.
Let rise to double .
Bake at 400 degrees F until golden brown, about 20-30 minutes.
