Creamy Chicken Sauce Base


You will need:

4 oz. butter
4 oz. flour
1/4 gal. Milk or half and half , or stock
2 c. cooked chicken meat, rough chopped
1/4 c. red bell pepper, washed, remove seeds, cut into medium size strips
1/4 c. white onion, rough chopped
1/4 c. celery, washed, rough copped
Chicken base to taste
Salt and pepper to taste


Method:

Melt butter in a heavy bottom pot large enough to hold at least three (2) quarts of liquid.
Add all vegetables and cook over medium heat stirring occasionally until vegetables are soft.
Slowly add flour and stir continuously so that all the flour is mixed in well. Simmer over a low heat and cook for approximately ten (10) minutes stirring often to be sure not to burn the mixture. Next, slowly add the milk or half-and-half and whisk being sure to incorporate the roux into the milk or half-and-half. Cook until thickened. Add chicken base to taste. Add salt and pepper to taste. Add the cooked chicken meat and let stand for five (5) minutes.

CREAMY CHICKEN BISCUITS AND GRAVY
Serve over buttermilk biscuits.

CHICKEN CORN CHOWDER

Add corn, potato chunks and chopped bacon to the mixture …thin with milk

CHICKEN DIVAN
Serve over crisp broccoli spears , and top with parmesan

CHICKEN AND DUMPLINGS
Add cooked carrots and celery
Make simple dumplings from biscuit mix
Boil a little water in your frying pan and add ice cream scoops of biscuit batter
Cover pan and cook for 10 minutes

CHICKEN POT PIE
Add cooked onions, celery, and carrots
Place in casserole dish or individual bowls and cover with pie crust and bake.
Also take the frozen patty shells and fill or roll out the dough for a quick flaky pie crust.

CHICKEN FLORENTINE SOUP….
Add fresh or frozen spinach sauted onions that you finish with a splash of white wine
Thin the gravy with stock or milk.

CHICKEN TETTRAZINI
Boil spaghetti noodles and blend in the chicken mix. Add sauted mushrooms flavored with garlic, sweet basil and white wine. Blend in a white cheese like parmesan or asagio regiano , even mozzeralla. Place in a bowl and top with bread crumbs and more cheese. Bake for a few minutes to brown and serve with toasty garlic bread.
