Corned Beef Sauerkraut and Potato Auflauf

Serves 4

Ingredients:
3 cups Sauerkraut
1/2 teaspoon allspice
2 large Tart apples, chopped into 1/4 inch dice1 medium onion finely diced
2 teaspoons brown sugar
1 cup Apple juice or pineapple juice

3 cups mashed potatoes or 4- 6 leftover cooked potatoes thinly sliced

2 cups left over chopped Corned Beef

1 small can of condensed cream of mushroom soup or 2 cups cream sauce.

4 tablespoons melted butter
1 / 2 cup bread crumbs
1 teaspoon of paprika

Directions:
Pre heat the oven to 350 degrees.


1. Rinse the sauerkraut in a colander, in a bowl mix the kraut, allspice, apples, brown sugar and apple or pineapple juice.

In a 13 x 8 inch ovenproof baking dish or similar

2. Layer half the kraut mixture, then the corned beef, Then dot with half of the soup or cream sauce.

3. Top with half of the corned beef.

4. Repeat steps 2 and 3.

5. Top with the mashed potatoes or the sliced potatoes

6. Mix the butter bread crumbs and paprika and spread over the top of the casserole.

7. Bake for 30 minutes covered. Then uncover and bake for another 15 to 25 min until bubling and brown. It should read at least 190 degrees F internal temp.
