(apple Scramble)

ingredients:
Serves 2


Batter:
4 eggs
1 / 4 cup all purpose flour
1 / 4 cup milk
1 / 4 teaspoon salt
1 / 4 teaspoon grated lemon peel

Filling:
1 large Apple, (2 medium)cored, and sliced
1 / 2 stick of butter,( 2 oz )
1 Tablespoon vanilla Sugar
or sugar and vanilla extract
1 teaspoon cinnamon
1/ 4 teaspoon nutmeg
Powdered sugar for dusting

 

Directions:
1. Combine the flour, eggs, milk, lemon peel and salt, and stir into a smooth batter. Add the vanilla sugar, cinnamon and nutmeg to the apples.
2. In a skillet, melt the butter and lightly saute the apples. Dust with the vanilla sugar or the sugar and vanilla extract.
3. Pour the batter over the apples. Constantly stirring till most of the “Kratzet” is set.
4. Cover the pan and turn down to low. Cook for a few more minutes until the steam sets the top. If Now comes the fun part, to filp it over. If you want to serve apple side up just cut wedges and serve.
Here is my suggestion for flipping the Kratzet. Slide onto a plate, then take another plate and cover. Turn over. If you wish now to brown the other side slide it back into the pan.
Cut into triangles and serve, dusting with some powdered sugar.
