Knoedle Einzi

I love Knödel, especially leftover ones. I like to melt some butter in a fry pan and in put the Knödel (which I cut in small chunks) heat them slowly untill they have a slight brown crust. Then I crack some eggs into the pan and mix it all together.Looks like scrambled eggs and small dumpling junks.After that I chop parsley or chives and add salt and pepper to taste! Heaven in a pan :o) You can serve with a green salad or just enjoy as is! Hope you give it a try one time. Einzi
