Kuche or Quiche

Kuche is a predecessor of Quiche. This recipe comes from Germans who lived in Elsass-Lotharingen/ Alsace-Lorraine. Now a part from France, but it has been German from 1871 till 1919 and later during the second world war. The germans invented a KUCHE, but the french could not pronounce this word so they gave the name for this splendid dish QUICHE.

This serves 6 good portions or 8 medium portions.

Ingredients:
1 pie crust for a 10 inch pie pan
1 tablespoon mustard of choice
2 onions sliced julienne

2 cups about or 1 lb. Grated Emanthalleror Swiss cheese

1 cup cooked spinach. Frozen works well.

cups sliced Mushrooms
5 eggs
1/2 cup cream or milk
pepper and salt

Directions:

Pre heat oven to 350 degrees

Saute the onions in a 12 inch or larger skillet till golden brown.

Meanwhile take a pie crust land form in a nice pie pan or pie tin.
Prick with a fork in 4 places.

Spread mustard on the bottom of the pie crust.

Bake pie crust for 10 minutes just to brown a little.
This procedure gives you a crispy crust for your Kuche.

Place the sauteed onions in the pie shell.

Place the spinach and mushrooms in the shell.

Beat the eggs and cream or milk and blend in the shredded cheese.

Pour into the shell and bake at 325 degrees for 45 min to 1 hour till
set.

Let it set a few minutes before cutting.

To Cut Quiche into 6 pieces, make the first cut all the way across dividing the Quiche in half.
Next cut each half into 3 pieces.

OPTIONS: You can vary the vegetables and the cheeses.
