Apple-Elderberry Jam

Made one batch of elderberry-apple jelly yesterday afternoon, cooked the elderberries in fresh apple cider, due to the bush only producing one bowl full of berries.   It is not quite as good as all elderberry which has a heavenly flavor, but it is good (sweet but that was the recipe)

Basic Apple Cider Jelly

Makes about 6 half pints

Ingredients:
1 quart apple cider
1 (1 3/4 ounce) package powdered fruit pectin
5 cups granulated sugar

Place apple cider and pectin in a large kettle, and bring to a full rolling boil. Add sugar; return to a full rolling boil, stirring constantly. Boil for 1 minute.

If you add berries or other fruit to cook in the apple cider just make sure that the amount of total juice is 1 quart. if it is too much then just simmer it down a bit. the water will evaporate and the flavor will intensify.


This was all the elderberries that Karen got this year from her tree.
She takes berries easily off the stems by using a fork. She then cooked thes berries in the cider.

The juice is then strained through cheesecloth to get a clear liquid

 

THE COLOR IS FABULOUS, RICH RUBY PINK.

Ladle jelly into hot, sterilized half-pint canning jars, leaving 1/4" headspace. Wipe jar rims and adjust lids. Process jars in a boiling water canner for 5 minutes (start timing when water begins to boil). Remove jars from canner; cool on racks.
