Potato Pancakes

This is a family recipe of Susan Miller, they are served with jelly instead of the usual applesauce and sour cream.

Ingredients:

1 cup Sifted all purpose flour
2 teaspoons salt
2 teaspoons Baking Powder
2 eggs, unbeaten
1 cup milk
4 tablespoons butter, melted
3 cups potato, grated

Instructions:.

1. Grate Potatoes

2. Mix all ingredients together

3. Lightly Grease skillet

4. Fry until bubbles form and then flip over (about 2-3 minutes)

5. Lightly Butter Pancakes and top with Jelly

I use a mini food processor to grate the potatoes, takes about 3 seconds.
