Corned Beef Salat
Serves 4
Ingredients:
1 / 2 lb diced Corned Beef
1 /4 lb diced Firm cheese,your choice Emmentaler, Pepper Jack
1 cup diced pickles 1/2 inch dice.
1 purple onion. Dice or cut into rings
Dressing:
1 /4 cup olive oil
2 tspDijon style Mustard
1 tsp Vinegar, your choice
Salt and Pepper to taste
4 cups Salad Greens
Directions:
1. Blend the meat, cheese, pickles and onions together in a bowl.
2. whick the dressing ingredients till well blended.
3. toss the dressing with the salad ingredients, and serve on a bed of greens
with a nice bread.
