Herring Salat
Anette Holmes Mother's Recipe

Ingredients:

6 herring fillets
2 pickles ( not sweet eww)
2 small onions
1 apple
2 tbs lemon juice
1 cup sour cream
2/3 cup Yogurt
1 tbs horseradish ( fresh if possible)
4 tbs wine vinigar ( white vinigaris ok as well)
3-4 tbs vegatable oil
salt and fresh pepper to taste

Directions:

Cut the hering is bite size pieces.

Cut the onions in thin rings, peel and core the apple then quater it and cut into small pieces.All those ingredience get tossed with the lemon juice.

Now combine the sour cream, yogurt, horseradish ,vinegar and oil into a dressing and combine with the fish and vegetables.Taste and add salt and pepper to taste.

Let sit over night in fridge and serve the next day with a crusty bread or with some nice boiled hot potatoes.

You can also all beets to the salat and that will make it pink. To me it adds no aditional taste. Also some fresh chives spinkled on top before serving adds a nice touch and freshness. Good luck and hot damm I wish I lived closer LOL.
