This is from the Swabian area of Germany where they are known for their Spaetzle. To make more Gemutlichheit to your Spaetzle add Emmentaler cheese and top with caramelized onion. The perfect dish to take to a German Pot Luck also

Ingredients:

Basic spaetzle recipe

4 Cups cooked spätzle
2 large onions sliced in thin round slices or juliene
1 stick butter divided in half melted
2 Cups Emmanthaller Cheese
(can substitute Swiss Cheese)
1/2 cup cream
Chopped parsley (optional)

Make the Spaetzles
Basic spaetzle recipe



While you are making the spaetzle caramelize the onions with half the melted butter

Grate the Emmentaler Cheese

Add a bit of cream to the spaetzle and 1/2 cup cheese

 

This is another sauce I make to lower the calories
it is non fat sour cream and laughing cow cheese heated lightly in the
microwave.

Add the sauce to the Spaetzle

Then I found a 2% swiss cheese that lowered the fat content

 

Add some butter to the bottom of your glass pan

 

Add a layer of Spaetzle then onions, then cheese

Repeat the layers finish with some onions.

Bake in 350 degree oven for 20 -30 minutes till lightly browned and bubbling

Let sit for a few minutes before cutting and you can cut a nice layered square.
