Why do we toss our salad the same way as they did in Ancient Greece and Rome?
The History of Vinaigrette
It would seem like a boring topic, how to dress a salad with oil and vinegar
also known as vinaigrette? Or to take time to discover its history and mastery.
I personally find almost anything to do with food interesting because I wonder about its roots……and what are the events of life that surround it. All great dishes seem to always have circumstances that affect it.
I can’t imagine tasting food simply in a laboratory and develop the same love that I have for a dish.
If you are like me, I suppose after making a few salad dressings that come up flat is enough to make you wonder if there are any tricks and rule’s of thumb over the years or centuries that gives your taste buds that decided feel of a perfect recipe.
Then I get to thinking what is the history of behind “vinaigrette” and then I start to look. That leads me into not just vinaigrette but why should I use olive oil? ….where did that come from? |

The olive tree seems to be the source of the begining of
vinaigrette dressing. Some Olive trees like this one in Pelion, Greece are
over 2000 years old. This is a start .......
