Stuffed Zucchini
with cheese and herb stuffing

The History of Zucchini

Stuffed Zucchini with Cheese and Herbs , done on the BBQ.

Serves 4
prep time: 20 minutes

Ingredients:
1 medium size zucchini
1 / 2 cup cream cheese
1 cup feta cheese
2 tablespoons chopped onion or shallot
2 tablespoons chopped fresh herbs, like basil, thyme or tarragon
2 slices of bacon or 2 oz ham fried and chopped


1 cup bread crumbs
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper

1/2 teaspoon paprika

Cut the zucchini in half and hollow out the pithy center part with a spoon.

Mix the cheese mixture and chill so it can compact

I blanched the zucchini on the grill, to cook half way.

Fill the zucchini with the filling, mix the bread

Cover and cook for about 15 minutes until the cheese warms and the zucchini finishes cooking.
