Cranberry Salsa

Ingredients:

One 12-ounce package fresh cranberries
1 bunch cilantro, washed and tough stems removed, coarsely chopped
1 / 2 cup sugar (more or less, to taste)
one seeded jalapeno, minced (more or less, to taste)
juice of half an orange, freshly squeezed (do not use canned orange juice; it must be fresh)
grated zest of one orange
salt to taste (it needs quite a bit; it should be more salty than sweet)

Directions:

1. Process cranberries and cilantro in food processor but not to a mush;leave some texture in, as if they were chopped.

2. Add everything else, adding more or less of this and that so that it suits your taste.Chill. You can use the juice of the whole orange if the orange is small or not too juicy, but just don’t make the salsa watery.

Some other options,

Use the juice of one lime, freshly squeezed instead of orange juice.

1 tablespoon very finely minced fresh ginger.

1 / 2 clove garlic, pressed or very finely minced (if it's a small clove, use a whole one)
