Popovers with blackberry butter

Serves 6 people

 

Preheat oven to 450 º

Place a medium size cup muffin tin in the oven.

 

In a large mixing bowl mix but do not over mix;

4 large eggs

1 C  milk

1 C All purose flour 

1/2  tea (10 grams) salt

1 Tbl. (20mls) cooking oil

 

Directions;

Take muffin tin out of the oven and spray with non stick spray. 

 

Fill muffin tins up 3/4 of the way full. Remember you are dividing the batter 

6 ways. 

 

Bake 20 min, Then turn down and bake another 25 min. or until brown and very firm. 

it is a good idea to turn the oven off and let them sit awhile to "dry" a bit , then they won't fall.

Serve with blackberry butter. 

 

Blackberry Butter 

1/2 lb. margarine or butter

1 Cup honey 

1 Cup blackberries( raspberries will work also)

 

Directions;

Soften butter or margarine and mix well.

If you have a mixer it works well.
