"What about Bob" Chicken

Here is the recipe for 5 servings. You need 10 pieces of cut up fryer chicken (we cut the breast in 2 pieces).
Marinade for Chicken:
- 1 quart water
- 1 t salt (preferably Kosher)
- 1 t black pepper
- 1 t crushed garlic
- 1 t red pepper flakes
- 1 t worchstishire sauce
- Place chicken in marinade for 3 hrs. at least,
overnight is the best however.
Breading:
- 2 Cups white flour
- 2 Cups crushed cornflake crumbs.
- 1 t salt
- 1 t black pepper
- 1 t paprika
- 1 t garlic powder or granulated garlic.
Heat a large skillet with a 1/2-cup of good quality oil. We use Corn oil
on Medium heat. Don't get it too hot or else it will sputter at you.
Put all ingredients in a large paper bag or a 1-gallon ZipLock bag.
Put the chicken in a few pieces at a time and close the bag and shake.
Set the breaded pieces on a plate and let set for 10 minutes.
When skillet is hot set the pieces in and don't make it overcrowded.
Leave spaces, it is best to do in 2 batches. It has to brown correctly or Bob won't Go UM UM, and neither will my kids.
Cook chicken to an internal temperature of 160 degrees.
My suggestion is to brown it nicely, put on a platter, and then microwave for short period of time (2 minutes) until the chicken is done all the way through. The dark meat (thighs and legs) will take longer than the white meat. Don't overcook the breast pieces!
Serve with Garlic mashed potatoes, buttered peas, and a huge green salad piled high and deep!
