Ingredients
1 lb. ground beef (or beef and pork)
1 day old hard roll (place in dish, add water and soften, then press out water and save roll for mixture)
1 onion
parsley
4 anchovies (optional)
1 egg
1 Tbsp. hard grated cheese
salt
pepper
nutmeg
Gravy:
2 Tbsp.butter or olive oil
2 Tbsp. flour
3-1/2 cups water
2 Tbsp. capers
Directions:
Mix ground meat with softened roll, finely chopped onion, about four pieces of finely chopped parsley (stems removed),
anchovies, egg, and grated cheese, add salt, pepper, and nutmeg according to your taste.
Make a gravy from butter or olive oil, flour, and water.
Add small rounded meatballs and cook in gravy. Add capers and simmer slowly for 20 minutes.
If you like a lot of gravy, double the recipe for the gravy.
Serve with potatoes and a green salad.
Potatoes: (Salzkartoffel)
Peel and quarter 6-8 Yukon yellow potatoes (depending on size)
and boil for 15 minutes or until done.
You may want to add a little salt to water before boiling the potatoes.
Yukon potatoes taste especially good, but you may want to use others.
Green Salad: (Gruener Salat)
Choose Boston lettuce, wash thoroughly, tear in bite-size pieces, add 1-2 finely cut green onions and vinaigrette.
Vinaigrette:
2 Tbsp. Olive Oil
2 Tbsp. Rice Vinegar (for salads)
1/2 tsp. Poupon mustard
salt,
pepper,
onion powder,
garlic powder,
paprika powder,
dillweed.
Mix all ingredients for vinaigrette well. Use blender or beater.
Serves four.
