Taken from the book entitled “Das beste Dr. Oetker Backbuch “ p. 159

Dough

250g sieved flour
75g sugar
1 egg
Pinch of salt
1 teaspoon of grated lemon rind
50g of ground hazelnuts
125g of soft butter

Combine these in a bowl using a hand mixer with dough hook till it comes together. Turn out on to floured boards and knead to a smooth dough. If the dough is too sticky rest in refrigerator to rest for a time.

Bring 250g milk to the boil

Pour over
250g ground poppy seeds and let steep till the seeds are swollen into a mass.
Cut 250g Marzipan into pieces and add to poppy seeds
Mix until well combined adding
50g honey
50g chopped sultanas
100g finely chopped sugared lemon peel
Grated rind of 1 lemon
1 -2 teaspoons of cinnamon1-2 teaspoons of ground cloves

50g fined ground almonds
4 Zwieback finely grated
3 eggs and
2 tablespoons of rum
Roll the dough into 35 x 30 cm
