(steak tartar)

Consists of raw beef "Top of the Round" or any good quality that contains no fat.

Our German butcher used to grind it fresh in a separate meat grinder to avoid contamination of other products. My father added a raw egg yolk & some times capers. I used just chopped onions & salt. We did not add any other spices. Enjoy.

Serve on good German rye bread (no seeds) open face (only one slice of bread).
