Chocolate Fudge Pecan Pie
INGREDIENTS:
CRUST:
1 1/4 cups chocolate wafers crumbed in blender
1/4 cup soft butter
1 tablespoon sugar
1/4 cup pecans chopped in blender with wafers.
Combine all ingreients and press into bottom and up sides of deep 9 or 10
inch pie plate.
FILLING:
3 Large eggs, beaten lightly
3/4 c Sugar
3 tb All-purpose flour
1/2 c Evaporated milk
1 tb Vanilla
3/4 c Dark corn syrup
8 oz Chocolate - bittersweet or semi-sweet, melted and cooled.
1/2 ts Salt
3 c Pecan halves DIRECTIONS:
In a bowl, whisk together the eggs and sugar, then whisk in the flour,
evaporated milk, vanilla, corn syrup, chocolate, salt, and pecans.
Pour the filling into the pie shell and bake the pie in the middle of a
preheated 350F degree oven for 1 hour to 1 hour 10 minutes, or until the
filling is just set and cracks appear on the surface. Let the pie cool on a
rack and serve it with whipped cream.
