WHIPPED SWEET POTATOES
INGREDIENTS:
Peel and boil 2-3 large (2-3 lbs?) fresh sweet potatoes or Yams until well-done.
1/2 cup butter
1/4 cup brown sugar
1 tsp salt
1/2 tsp nutmeg
1/4 tsp cinnamon
about 1/2 cup sweet cream
DIRECTIONS:
Preheat the oven to 350F. Add the following ingredients and mash everything together.
Add more or less brown sugar to suit your family's tastes. Add cream gradually while whipping until the mixture is smooth and creamy.
LOWER-FAT VERSION
I have modified this for dieters, heart patients and diabetics as follows:
1/2 cup low-fat, low cholesteral butter substitute
1/2 tsp salt
1 tsp nutmeg
1/4 tsp cinnamon
about 1/2 cup plain low fat yoghurt.
Turn the whipped mixture into a 2 quart glass casserole dish. Sprinkle lightly with nutmeg. Dot top with butter or brown sugar if desired.
Bake in oven for 30 minutes. If desired, top with mini marshmallows during the last 15 minutes of baking.
