How to make


Vanilla Vodka * Kaluha * Baileys Irish Cream

 

Vanilla Vodka

 

 

To make vanilla vodka

take 5 vanilla beans

This is a simple non-wired ribbon from a craft store.   Tthe color will not bleed out.

Place the Vanilla beans in the vodka by just sliding them down through the neck.

Let the vodka sit for a month or so.

In 30 days it will look like this.

I like a little bit over ice, also can be used for flavoring , coffee, hot chocolate, vodka martinis, and other cocktails. Add a touch to your fruit smoothie.

Pour a touch on a fresh fruit salad and toss, or make vanilla peaches in champagne , or fresh pears poached in wine with a bit of vanilla vodka,

When sauteing scallops or shrimp or even chicken breast, finish it with a little vanilla vodka. since vanilla is a mild "flavor enhancer" it just adds a wonderful background to the natural glaze that develops in the saute and seasonings.

Kaluha

2 cups water
2 cups white sugar
1/2 cup dry instant coffee ( a dark roast, I use Folgers)
1 vanilla bean
1 and 1/2 cups vodka

Cut the Vanilla bean in half
save one half, with the other half cut into 1 inch pieces and grind with the sugar together in a food processor or chop fine by hand with the sugar. (The more you chop the bean the more the flavor can disolve.)


Boil water and sugar and vanilla bean at a rolling boil for 10 minutes.

Turn off heat. Slowly add dry instant coffee and continue stirring.

Combine the cooled sugar syrup and coffee solution with the
vodka. Cover tightly and let sit on the counter or cupboard in a cool place. You can use the Kaluha the next day if you want. But it improves with age. a month is a good amount of time to let it sit. Shake it every day if you can remember.

It is a good idea to strain out the vanilla particles if you are going to give it as a gift.

If you like a smoother feel to the liqueur you can add about 1 teaspoon
of glycerin to the finished product.

Yield: about 4 cups

Bailey's Irish Creme(Cream) Recipe


1 1/4 to 1 3/4 cups Irish Whiskey, Rye Whiskey, Brandy, Rum, Bourbon, or Scotch(Bourbon or Brandy is most recommended)

1 14 oz. Can Eagle Brand sweetened condensed milk.

2 Cups (1 pint) whipping cream or half and half.(half and half is recommended)

3 Tbls. Chocolate flavored syrup.

2 Tsp. Instant coffee, whatever brand you can get, regular not flavored.

1 split Vanilla bean

1/2 Tsp. Almond extract.

Combine all ingredients; blend until smooth. . To get increase flavor let it sit tightly covered in the fridge for 2 weeks to mellow. Then add the cream or half and half and whip in a blender. Serve over ice if preferred. Always stir before serving . It should stay good in the fridge for 2 weeks after you add the half and half or cream.
