Chicken and Spinach and Jamaican Banana


Calorie friendly. I think the most important thing about this recipe is the ease of it. I should do a youtube to show just how fast you can make this, and it should be a regular item on your breakfast menu.

1 egg
1/4  cup flour
1/4  cup milk (non fat or low)
1 teaspoon sugar
1/4 teaspoon salt

1. Mix all ingredients very well and let sit for the last bits of flour to dissolve, while you get your other ingredients together.

2. . Coat a non stick skillet with spray oil or use ½ teaspoon of oil or butter and coat pan well even the
sides.

3. Ladle in half of the mix and tilt pan to till you get a thin coating all the way around the pan and even up the side of the pan.

4. Cook on one side till lightly browned and then use a thin silicon rubber spatula
to flip it and then just cook it for 10 seconds as it is done just needs a little browned.

The Fillings

Ingredients:

Jamaican Banana Filling:

1 banana sliced
vanilla bean or vanilla extract
2 tablespoons rum soaked raisins*
1 teaspoon butter
1/4 teaspoon cinnamon

I like to use a nice spiced rum or Jamaican dark rum for the flavor of the bananas. Soak 2 tablespoons raisins and soak them in 1/4 cup rum overnight.  

1. Sauté the banana slices till lightly brown.
2. Add the raisins and rum and cook letting the flame subside.
3. Fill the crepe with most of the filling but leave a little for the top

You can top it with whipped cream or sweetened yogurt if you like.

Chicken Spinach Filling:

1 teaspoon olive oil or butter
2 oz cooked chicken breast
1 tablespoon chopped onion
2 sliced mushrooms
1 teaspoon chopped garlic
1/8 teaspoon fresh cracked pepper
1/4 cup white wine
 
Handful of fresh spinach

1. Saute the onion, garlic and pepper till tender
2. Add the mushrooms and cook till tender.
3. Add the chicken and cook to heat
4. Add the spinach and cook till tender
5.  Add the white wine and deglaze the pan
6. The mix should be moist and have a light sauce that binds it. You can add a bit of water, chicken stock, milk or sour cream if you want to make it “saucy”
