Crustless Quiche
with Spinach Filling

History of Quiche Lorraine | Basic Quiche Recipe

  Ingredients:

Custard:
4 Eggs
1 cup low fat Cottage Cheese
3/4 cup low fat milk
1/4 cup Nutmeg
1/2 tea Salt

Filling:
1 cup chopped Spinach
1 cup chopped onion
1/2 cup Ham and chopped Bacon combination
4 oz grated White Cheddar
1 tblsp Olive Oil
1 tea Black Pepper

 

1. I used for this custard filling, cottage cheese and milk instead of the usual cream or 1/2 and 1/2.
I blended it in a small blender. Alternatively you could just press it through a sieve or use an immersion blender.
You can also use cream cheese as a substitute.
Don't forget the nutmeg it is important


I chopped a cup of spinach, a cup of chopped onion approx. and 1/2 cup of ham and bacon.
You can of course use just ham or just bacon or eliminate it if you don't want to use meat.
all together 2 cups of filling is a good rule of thumb.

 

Saute the onions and bacon with the black pepper making sure the black pepper makes contact with the hot
skillet, this will open up the flavor. add the chopped spinach and cook another min or so.
I put the cooked filling in a pie dish and put the grated cheddar in the custard filling.

Pour the custard over the filling ingredients, and bake for 25 to 30 min at 350 till it reaches 160 degrees and lightly browned.

It makes a nice light dinner with a salad.
