Italian Restaurant House Salad
with Iceberg Lettuce

 

 

I hope this brings back memories of the “house salad” from that Italian-American restaurants you grew up eating at, all you need is a red checkered table cloth and your full on retro.

Ingredients 4 servings

1 salad bowl full of Iceberg lettuce

For the Dressing:

1/2 cup olive oil

5 tablespoons white wine vinegar
1 tablespoon mayonnaise
1 tablespoon sugar
1 1/2 teaspoons dried oregano
1 garlic clove, finely grated
Kosher salt,
freshly ground pepper

Directions:

Whisk oil, vinegar, maynnaise, sugar, oregano, and garlic in a small bowl.

Season with salt and pepper.

Cut lettuce in half through stem end. Cut or tear apart into large or bite size pieces.

Add some other garnish like sliced radish, tomato wedges, purple onion and croutons.

Drizzle with dressing to coat to your liking (you’ll probably have some extra) and top with more black pepper, and if you want Parmesan cheese
