The History of Kamado Grills

 

What is the attraction of this weird shaped BBQ?

The attraction of the Kamado grill is very simple.

If you could have one device that can smoke food, at a consistent temperature of 225 degrees or 600 degrees, but also be able to sear and cook a steak at 600 degrees over mesquite, grill vegetables and fruit with a nice light char, cook a pizza, steam rice or bake a fruit cobbler.

Do you, (the author here) Actually use a Kamado Grill ?
YES!!

The special feeling I personally get while cooking with the Kamado grill, is hard to describe, but it has to do with not just the heat but the aggragation of heat inside the 3 inch thick walls, it is "intense without being too hot".... Maybe "Thick Heat" is a better way to put it.
Regardless it is powerful and with the aroma of mesquite or hickory, it's awesome!

Can you give me a breif History of the Kamado Grill?

Where was the Kamado Grill Invented?

The Kamado grill was invented centuries ago either in ancient China and Japan.

What does the word Kamado mean?

Kamado is a Japanese word means roughly, "The place for the cauldron or stove"
It is not the actual pot, but the stove that is made so the pot can fit. The goal was to
create a cooking system that would create an even heat to cook rice properly.

What Did the first Kamado stoves look like?

In Ancient China ovens similar were used.

Here is a Japanese Kamado Stove that you set the pot on. While this is not the shape,
it is a similar idea that inspired the present day, portable Kamado grills. The Fire box below produces the heat and you can set a pot or grill of different sizes on the burner.

The Kamado goes to America

Ed Fisher is the founder of the Big Green Egg Company, which manufactures the popular Big Green Egg grills. Ed Fisher is credited with revolutionizing and popularizing the Kamado-style cooker in the United States.

In the late 1960s, Fisher was an American serviceman stationed in Japan. During his time there, he discovered the traditional Japanese mushikamado, a clay pot used for cooking. Impressed by its performance and versatility, Fisher recognized its potential as an outdoor cooking appliance.

After completing his military service and returning to the United States, Fisher was determined to introduce the Kamado-style cooker to American audiences. In 1974, he founded the Big Green Egg Company and began manufacturing his version of the Kamado grill.

Fisher made several innovations to enhance the performance and durability of the Kamado-style cooker. Instead of using traditional clay, he utilized a modern ceramic material that provided superior insulation and heat retention properties. The green ceramic exterior became a distinctive feature of the Big Green Egg grills, giving them their iconic appearance.

What are the features of the Kamado Grill and how is it designed?

The first time I saw a "Big Green Egg" I didn't get it! The cooking are looked so small. I was use to a Weber gas grill that was wider than tall. This thing looked like it was way taller than wide and that made no sense.

However the purpose of the deep chamber and egg shape, is to create an environment that the heat can rise and flow freely around the curved surface, creating a "convection current", and keeps a consistent and what I call a "thick heat". around the food. The chamber has a 3 inch thick ceramic wall that retains and radiates back the heat, and with the felt like gasket retains the heat, and burns the charcoal or wood very slowly, making it economical as well.

What is the Future of the Kamado Grills.

The desire and functions of the Kamado Grills are growing.
