Note: By using Egg Beaters or egg whites you can significantly lower the fat and calories
of this dish. to substitute white whole wheat pastry flour will add a bit more fiber.
You can use a non stick skillet and just a bit of non stick spray or olive oil instead of the butter to cut down on calories.

Directions:

1. Combine the flour, eggs, milk, lemon peel and salt, and stir into a smooth batter. Add the vanilla sugar, cinnamon and nutmeg to the apples.

2. In a skillet, melt the butter and lightly saute the apples. Dust with the vanilla sugar or the sugar and vanilla extract.

3. Pour the batter over the apples. Constantly stirring till most of the “Kratzet” is set.

4. Cover the pan and turn down to low. Cook for a few more minutes until the steam sets the top. If Now comes the fun part, to filp it over. If you want to serve apple side up just cut wedges and serve.

Here is my suggestion for flipping the Kratzet. Slide onto a plate, then take another plate and cover. Turn over. If you wish now to brown the other side slide it back into the pan.

Cut into triangles and serve, dusting with some powdered sugar.
