Ingredients:

4 servings

Ingredients:
2 cups Red cabbage, Raw, Shredded
1 medium apples, Sliced, Unpeeled
1 tablespoon lemon juice
1/2 cup raisins
1/4 cup pineapple juice
1 1/2 teaspoons lemon juice
1/4 teaspoon salt
1 tablespoon sugar
1/2 cup sour cream

Shred cabbage by cutting the cabbage one way. You can chop more than once ,
but slice it just up and down.
This will give you long shreds as opposed to small pieces.

I do the same with the apples. Cut just one way so they are long thin pieces.

1 TBS lemon juice to wet
diced apple to prevent darkening.

Mix the dressing ingredients and add to the cabbage and apples and raisins.

This salad went great with a
Pretzel Crusted Schnitzel
we made.

This would be appropriate for
diabetics if sugar is omitted
or substituted
