Käsespätzle

This is a very popular way to ramp up this popular German noodle dish.
This is like a German macaroni and cheese dish so you could serve it with a simple meat, like a roast, bratwurst or ham.

4 Cups cooked spätzle
2 onions sliced in thin round slices
1/4 cup oil
1 1/2 Cups Emmanthaller Cheese
(can substitute Swiss Cheese)
Chopped parsley (optional)

For spätzle:
Prepare the Spätzle as shown in the recipe or cook a nice packaged spätzle. See below for brands.

For assembly:
1. Brown the sliced onions in the olive oil on medium heat in a large skillet till golden brown.
Remove and drain on a paper towel.

2. In a large oven safe casserole dish put a layer of spätzle on the bottom.

3. Sprinkle 1/ 4 of the cheese over the spätzle, and 1/4 of the onions.

4. Repeat this 3 more times

5. Bake for 20 to 30 minutes until lightly browned on top
