Late Summer BBQ Ideas

Summer days are way over the yard arm now, and soon we will be thinking of the fall
and Oktoberfest. But it still time to do some fun things on the BBQ

Chicken Rouladen
On the BBQ

This is a fun interesting recipe from Sabine Wörn that figured this out and sent it to me.
It is novel and fun to cut little pinwheels from a chicken breast rolled like a Cordon Bleu and then sliced into 4 and wrapped in bacon. Then you can BBQ these nicely.

Potato Wurst Salad

Take an ordinary Hot German Potato Salad, and blend in some nice Wurst like Ring Bologna, or Knackwurst, and you have a nice light summer meal with maybe some trimmings. If you spoon it on a bed of greens you have a well rounded meal.

Kohlrouladen
(Stuffed Cabbage Rolls)

You can make these on a plank on the BBQ ......

Swabian Potato Salad
(Schwaben Kartoffelsalat)

This potato salad has no bacon in it, and can be served warm but is great cold.
Many say this salad was perfected by the great German chef and restaurateur Alfred Walterspiel

Background:

Alfred Walterspiel was a famous German chef, restauranter and Hotelier 1881-1960 whose most famous restaurants were in Berlin. He is a native from Baden where it is said they like their potato salad "glitschig" which is a word like slippery.

This is a great choice for summer picnics because it doesn't have mayonnaise or bacon in it.

Andrea Meyers on her cooking blog says that when they were in Swabia, they had this salad and it was often a base for a green salad.

Blackberry Lavender Lemon Kuchen

Lavender is becoming more and more popular in Germany. For many years it's healing properties have been embraced, and always great in a garden as bees love them and make honey, and floral reasons.

More and more it is being used for in good German Essen. Like many items it has taken awhile as it easily can be overdone, The trick is to balance it with something else like rosemary for savory and in this case lemon and you have an absolutely wonderful new flavor experience.

I really enjoy picking blackberries, and that is where I got the idea to make this cake.

Maybe you also have an abundance of blackberries to use.

You can also do this cake like you can do any other baked item on the BBQ.
Like I did this Strudel the other day.
You just heat the bbq up on high and keep it covered, and bake it as you would
in your kitchen oven but using indirect heat.

Hand Held Mixer

My Favorite is the Cuisinart Hand Held Mixer

A handheld mixer is one of those kitchen tools that looks simple but makes a huge difference if you bake or cook often. The best one for you depends on whether you do mostly light mixing (whipped cream, cake batters) or heavy-duty work (bread doughs, thick cookie doughs).

Key Features of a Good Hand Mixer

  1. Power (Wattage & Torque)

    • Look for 200–300 watts minimum.

    • Lower wattage may struggle with thick doughs, but higher wattage doesn’t always mean better—motor quality matters too.

 

Speed Settings

  • At least 5 speeds is ideal, so you can start slow (no flour explosions!) and work up to fast.

  • A turbo/boost button is handy for quick bursts of extra power.

  • Weight & Ergonomics

    • Should feel balanced and comfortable in your hand.

    • Not too heavy, since you may hold it for several minutes at a time.

  • Controls

    • Easy-to-reach speed switch/lever.

    • Smooth transitions between speeds (some cheaper mixers jump too fast).

  • Beaters & Attachments

    • Standard beaters: for cakes, batters, mashed potatoes.

    • Whisks: for whipped cream, egg whites.

    • Dough hooks: for bread or pizza dough (works, but not as strong as a stand mixer).

    • Stainless steel beaters are sturdier and easier to clean than chrome-coated ones.

  • Ease of Cleaning

    • Beaters should eject easily with a button.

    • Dishwasher-safe attachments are a big plus.

    • Smooth surfaces (no deep seams) are easier to wipe down.

  • Cord Style

    • Swivel cord (moves left/right) helps whether you’re left- or right-handed.

    • Retractable cords keep things tidy.

  • Storage Options

    • Some mixers come with a snap-on case or beater clip-in base—saves drawer clutter.

  • Durability & Noise

    • A quieter motor is nice if you mix often.

    • Reputable brands (e.g., KitchenAid, Cuisinart, Breville, Braun) tend to last longer.

  • Extra Features

    • Slow start (so ingredients don’t splatter).

    • Cooling vents to prevent overheating.

    • Locking swivel head so it doesn’t wobble when resting on a bowl.
