Smoked Bratwurst

with Braised Cabbage and Kraut

Smoked Bratwurst on a Pretzel Bun, with German Potato Salad

celebrate Oktoberfest. Good German food and good German party music. I have become a huge fan of kicking up the kraut part of this meal by adding cabbage at the end to give it a little crunch and freshness.

Of course I add my typical bacon, onions and apples to flavor the kraut.

The perfect accompaniment to this meal is a

German Potato Salad

I have many choices to share with you. We did a light one with a vinaigrette
dressing and added peppers, onions and celery.

Ingredients;

4 strips of bacon diced
1 large onion minced
1 teas black pepper
1 jar sauerkraut ( around 3 cups, it doesn't have to be exact.)
4 cups of 1/2 inch diced white cabbage
1 diced red or green apple small dice
1 cup beer or white wine (optional)
2 cups of chicken or beef stock
4 Smoked German Brats
4 Pretzel Brat Buns

Green onions or any diced onion to sprinkle on top.

I chose to use my families cast iron dutch oven to make this dish and celebrate
our German heritage. To cook something acidic like kraut you need to have your cast iron
well seasoned.

Next I'm only going to simmer this for around 30 minutes and remove it to a serving platter or
you can build the brat sandwiches right from our pot and blanket them with this wonderful
cabbage,

 

Saute Bacon and onions in Dutch Ove

Sweat the bacon and then add the onions in your favorite Dutch Oven or large pot,

saute till the onions are soft.

Add cabbage

Add the cabbage and saute for a few minutes to brown it.

Add apples

Then add the apple and cook till tender. ( i don't add the apples with the cabbage as they have a lot of moisture
and will keep the cabbage from browning.

 

Add the kraut

Add the sauerkraut and 2 cups of beef or chicken stock, and the German sausages.
You can add a cup give or take of beer or white wine if you want. I tend not to if I am
using cast iron.

Finally add the brats

Simmer for 10 more minutes on low. Careful not to simmer at too high a
temperature or the brats will burst. It is nice to have the cabbage still a bit crunchy.

 

Warm or grill the pretzel bun, add the brat and the kraut mix, and potato salad.

When your ready to serve, heat the pretzel buns and add a nce smoky brat and top with sauerkraut.
I finished it off this time with green onions, but any other kind of onions works also.

Serve with some light German Potato Salad.

Enameled Cast Iron Dutch Ovens

Why should you buy an expensive cast iron dutch oven that
has been enameled?

The biggest purpose of the enamel in my estimation is that it won't react
to acidic foods, so it won't discolor them. You can also marinate in them, they won't rust on you.

What to Look For in an Enameled Dutch Oven?
The go to name for enameled Dutch ovens is of course Le Creuset.
It seems ridiculously expensive. WHY so much.
Well in reading it seems like their enamel is a higher quality than the cheaper ones. zz
Le Creuset is a 100 year old company in France, using the highest quality techniques
in making cast iron and enameling techniques. It is meant to last generations
and has a limited warranty against chipping of the porcelain.

Biography of my grandma
Emma Block
From Germany with Love tells the story of my grandma, Emma Block, growing up in a little town in Baden/ Würtemberg, Germany near Heidelberg named Steinsfurt. Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.
