Sylvia's Dampfnudel
( dampfnudelas, means steamed noodles or dumplings in German)
Here is a recipe I made for my children who just loved it. My daughter who was in German class had to bring a hot dish, so she choose to make this dish. We had to make 2 separate pots because some of them did not like sauerkraut. After they tried it they requested it from her every year.
2 peeled potatoes sliced thin
1 (16oz) can sauerkraut drained
1 large onion finely chopped
1 lb of polish sausage (which is a option) Diced
Dumpling
3 cups flour
2 eggs
1 tsp baking powder
1 cup of milk (depending on climate)
First make your dumplings by combining 3 cups flour, tsp of baking powder mix well. add 2 eggs than add milk until you get a soft dough. Let rest for 10 min or over night. You will make these by placing them in boiled water for five to 10 min until they float to the top. I ususally do them for 10 min and drop by the tablespoons in salted water.
In a large skillet with some oil to cover just the bottom place you potatoes and fry until almost done than add onions, sausage fry for about 10 more min. Thank add your dumpling and sauerkraut ( your dumpling may not all fit but that is ok save for another time). PLace about 2 tbls of butter of the top and fry for until your dumpling look a little golden brown. Season to taste with pepper.
